iranian food - Egg plant kookoo (kookoo bademjan)

Ingredient: (4 servings)
  • Eggplant: 8
  • Egg: 3-4
  • Oil: 1 cup   
  • Salt
  • Black pepper
  • Turmeric
Directions:
Peel egg plant and cut thinly, pour oil into the pan and fry egg plants in both sides with law heat.
Break eggs and add salt, pepper, turmeric.
 Mix them and stir completely.
Pour eggs into the pan and flatten it, then pour egg plants into eggs.
Let cook for 7-10 min. then cut into four parts and turn over until cook for another 5-10 min.
This Iranian dinner food can be more delicious if serve with bread and cucumber yogurt.
