How to cook Egg plan stew (Khoresht Bademjan)

Ingredients: (6 serving)
  • Egg plan: 500 grams
  • Potato: 500 grams
  • Tomato: 4
  • Onions: 3
  • Tomato past: 1-1/5 spoons
  • Lime juice: 1-2 spoons
  • Water: 2-3 glasses
  • Turmeric
  • Salt
  • Pepper
  • Oil: 1 glass
Direction: (cooking Persian food)
Peel potatoes and cut in small pieces, add salt and fry.
Peel egg plans and cut thinly, add salt and fry.
Cut onions in small pieces, fry in the oil, add turmeric, then peel tomatoes and cut in small pieces, add to onions and let cook for 5 min. add tomato past and 2 glasses of water. Add salt, pepper and lime juice then let slowly boil for 15 min.
Add fried egg plans and fried potatoes.
This delicious stew can serve with white rice.
