iranian food - Baby lima bean rice (Baghali Polo)

Ingredients: (4 servings)
  • Rice: 500 grams
  • Baby lime bean: 200 grams
  • Beef or lamb: 400 grams
  • Fresh dill: 300 grams
  • Sweet pomegranate: 1 spoonful
  • Salt
  • Black pepper
Direction:
Cook meat in 1-1/2 glasses of water and salt for 1 hour.
Wash and soak rice in water with 2 spoons of salt for 2 hours.
Clean and wash fresh dill and cut into small pieces.
Pour water in the pot, when water start boiling add rice and let boiling for 10 min until rice become soft, then add baby lime beans and chopped dill to rice, mixed them completely and drain.
Pour some oil into bottom of pot; add half of mixed rice with baby lime beans and dill,
Strew pepper to meat and then rob sweat pomegranate to it..
Put meat into rice and pour remained of rice into the pot.
Let this delicious baby lime bean rice cook with low for 1 hour.
