Iranian cooking- tomato with egg (omlet)

Ingredients: (4 servings)
  • Tomato: 500 grams
  • Egg: 3
  • Onion: 2-3
  • Garlic: 100 grams
  • Oil: 1/3 cup
  • Salt
  • Black pepper
  • Turmeric
Directions:
Peel and cut onions and garlic in small pieces.
Pour oil into the pan and add garlic and onions, fry until the color change to golden, add turmeric.
Peel and cut tomatoes in pieces and add to pan, pour salt and place the pan’s lid on, turn down the heat and let cook for 10-15 min.
Break eggs in tomatoes and pour black pepper, mix them completely.
Cook for 5 min and omlet is ready.
This Iranian dinner food can serve with bread.

persian food- (poore seeb-zamini)

Ingredients: (4 servings)
  • Potato: 1 kg
  • Milk: 1 glass
  • Butter: 2 spoons
  • Salt
Directions:
Wash potatoes, pour into the pot, add 2-3 glasses of water and after boiling, place the pot’s lid on and cook for 20 min.
When potatoes become cool, peel and crush them (can use the back of spoon), until potatoes become very soft.
Pour potatoes into the pan and put over the low heat and add milk very slowly to potatoes while stirring until become absorb by potatoes completely, then add butter.
This delicious Iranian food is ready for serving.

Ingredients: (4 servings)
  • Potato: 500 grams
  • Chicken (Brest): 400 grams
  • Egg: 4
  • Carrot: 2 medium
  • Onion: 1
  • Peas: ½ cup
  • Dill pick let: 100 grams
  • Fresh lime juice: 1 spoon
  • Mayonnaise
  • Salt
  • Water
Directions:
Pour potatoes and eggs into the pot and let cook with 2-3 glasses of water for 20 min.
Add salt, pepper and turmeric to chickens, then pour 1 glass of water and lime juice, cut onion into 4 parts and peel carrots, add to chickens, when water start boiling, turn down the heat and let cook for 20-30 min.
Pour peas into the small pot with 1 cup of water, cook for 10 min.
Let all of the ingredients become cold.
Crush potatoes, eggs and carrots. Cut chickens and dill pick lets in small pieces.
Add peas, salt and mayonnaise, and mix them completely, put in the refrigerator for 1 hour.
This Iranian dinner food can serve cold and with bread.

iranian food - Chicken kookoo (koo koo morgh).

Ingredients: (4 servings)
  • Chicken: 600 grams
  • Egg: 3-4
  • Onion: 3-4
  • Fresh lime: 1-2 spoons
  • Saffron: ½ teaspoon (optional)
  • Oil
  • Salt
  • Black pepper
  • Turmeric
Directions:
Peel and cut onions in slices and fry in the oil until become slightly golden.
Cut chickens into small pieces and fry with onions on both sides until color change, then add black pepper, salt and turmeric and 1 glass of water, let cook with low heat about 15-20 min until a little of water remained.
Let chicken become cool, remove the bones and chop the meat completely.
Dissolve saffron into 3 teaspoons of warm water.
Add eggs to chicken (with remained of water) and then pour salt, black pepper, saffron and lime juice and mix them completely.
Pour oil into the pan until become hot, turn down the heat and pour mixed chickens and eggs into it, flatten in the surface with back of spoon and let cook with low heat for 5-10 min.
Cut into 6 pieces radically, turn over and let cook for another 5-10 min.
This dinner food can be more delicious if serve with yogurt.

Iranian foods-rice with cabbage (kalam polow)

Ingredients: (4 servings)
  • Rice: 500 grams
  • Beef or lamb: 250 grams (ground or small pieces)
  • White cabbage: 1 kg
  • Onion: 1
  • Tomato paste: 1 spoon
  • Oil: ½ cup
  • Saffron: ½ teaspoon
  • Lime juice: 1 spoon
  • Salt
  • Turmeric
  • Black pepper
Directions:
Wash and soak rice in the water with 2 spoons of salt for 2-3 hours.
Cut onion in small slices and fry in the oil, when onions become golden, add turmeric, then add meat and let fry until color change to brown.
Wash cabbage and cut into small pieces. Pour some oil into the pan and fry it until wilted, then add fried cabbage to the meat.
Mix them completely and then pour saffron, tomato past, salt, pepper and lime juice. Add 1 glass of water and place lid on, let cook very slowly for 15- 20 min.
Pour 4-5 glasses of water into the pot, when water start boiling, add rice and let cook for 10-15 min, until rice become soft then rinse it.
Pour some oil into bottom of pot, pour half of the rice, then pour mixed meat and cabbage, finally add remained of rice into the pot.
Place pot’s lid on and increase the heat for 2-3 min, when rice is streaming, reduce the heat and let cook for 1 hour.
This Iranian food can be more delicious if serve with yogurt

persian food-Herbs’ stew (ghorme sabzi)

Ingredients: (4 servings)
  • Beef or lamb: 500 grams
  • Onion: 1-2
  • Black eye beans or kidney beans: ¾ cup
  • Spinach: 1/5 cups
  • Parsley: ½ cup
  • Coriander: ¼ cup
  • Tareh (garlic chives): ¼ cup
  • Shanbelileh (fenugreek): ¼ cup
  • Spring onions: 1 cup
  • Crushed limes: 2-3 or lime juice
  • Oil: 1/3 cup
  • Salt
  • Turmeric
  • Black pepper (red pepper is optional)
  • Water
Directions:
Soak black eye or kidney beans into the warm water for 2-3 hours. Cut onions in small pieces and fry, when onions become golden, add turmeric. Cut meat in pieces (not very small) and add to onions, let fry and change color to brown.
Wash all vegetables and chop, then pour some oil into the pan and fry them until wilted.
Add black eye or kidney beans and fried vegetables to the meat.
Pour 2-3 glasses of water to the pot, then add crushed limes, after water start boiling turn down the heat, place the pot’s lid on and let cook very slowly for 2-21/2 hours.
Add salt, black pepper and if you like stew be more sour, add 1-1/2 spoons of lime juice.
After half of one hour, stew is ready.
This Iranian famous food can serve with white rice.

Potato rice (estamboli)

Ingredients: (4 servings)
  • Rice: 500 grams
  • Potato: 4-5 big
  • Onion: 1 big
  • Tomato past: 2-3 spoons
  • Oil: ½ cup
  • Water: 4-5 glasses
  • Salt
Directions:
Wash rice and soak in warm water for 2-3 hours.
Cut onion in very small pieces and fry with oil into the pot, add turmeric.
Peel potatoes and cut square shape in small pieces and add to onions. When potato a little fry, add tomato paste and pour water into the pot. Add rice into the water and pour some salt, then mix completely. Place the pot’s lid on, after boiling, let cook until water dry. (stir rice during the cooking).
This Iranian food recipe can be more delicious if serve with yogurt.

Pomegranate stew (Khoresht Anar)

Ingredients: (4 servings)
  • Pomegranate’ seed: 3 cups
  • Egg plant: 500 grams
  • Garlic: 100 grams
  • Sugar: 1 spoon
  • Oil
  • Water
  • Salt
  • Turmeric
Directions:
Peel garlic’s and cut in small pieces.
Fry garlic’s with oil in the pan, add turmeric, add pomegranates’ seed , then pour 1 glass of water. Pour 1 teaspoon salt and place pan’s lid on and let cook very slowly for 15-20 min.
Peel egg plants and cut thinly, add salt and then fry them.
Pour sugar in the stew and then add egg plants. After 5 min stew is ready.
This delicious Iranian food can serve with white rice.

vegetables kookoo (Kookoo Sabzi)

Ingredients: (4 servings)
  • Vegetables (parsley, dill, coriander, fenugreek): 1 kg
  • Egg: 4
  • Barberry: 1 spoon (optional)
  • Crushed walnut: 2-3 spoons (optional)
  • Oil
  • Salt
  • Black pepper
  • Turmeric
Directions:
Wash vegetables and chop finely.
Add eggs, barberries, crushed walnuts, salt, pepper, turmeric and mix completely.
Pour oil into the pan, when oil become hot, pour mixed ingredients to oil and flatten the surface (can use back of spoon).
Place the pan’s lid on and let cook with low heat for 10 min, when kookoo is cooked under.
Cut into four places radically; turn over pieces until cook for another 10 min.
This Iranian dinner food can be more delicious if serve with bread and salad or yogurt.

 

Spinach with egg stew

Ingredients: (4 servings)
  • Spinach: 1/5 kg
  • Egg: 3-4
  • Parsley: 200 grams
  • Coriander: 200 grams
  • Fenugreek: 200 grams
  • Tareh (garlic chives): 200 grams
  • Onion: 2
  • Lime juice: 2 spoons
  • Salt
  • Black pepper
  • Turmeric
  • Oil
  • Water
Directions:
First wash vegetables (parsley, coriander, fenugreek, garlic chives) and chop them, then fry.
Cut onions in small pieces, wash spinach and cut in 2-3 parts and add to onions and fry.
When spinach fry, add fried vegetables and then pour 2 glasses of water and salt, put pan’s lid on and let cook for 30 min.
Add lime juice and break eggs into spinach (don’t mix), only let eggs cook completely
During egg cooking add black pepper to stew.
This delicious Iranian food can serve with white rice..

iranian food - Egg plant kookoo (kookoo bademjan)

Ingredient: (4 servings)
  • Eggplant: 8
  • Egg: 3-4
  • Oil: 1 cup   
  • Salt
  • Black pepper
  • Turmeric
Directions:
Peel egg plant and cut thinly, pour oil into the pan and fry egg plants in both sides with law heat.
Break eggs and add salt, pepper, turmeric.
 Mix them and stir completely.
Pour eggs into the pan and flatten it, then pour egg plants into eggs.
Let cook for 7-10 min. then cut into four parts and turn over until cook for another 5-10 min.
This Iranian dinner food can be more delicious if serve with bread and cucumber yogurt.

iranian food - Potato kookoo (kookoo sibzamini)

Ingredients: (4 serving)
  • Potato: 1 kg
  • Egg: 3-4
  • Onion: 2
  • Oil: 1 cup 
  • Salt
  • Black pepper
  • Turmeric
Direction:
Wash potatoes and put in the pot, add 2-3 glasses of water, after boiling let cook for 30 min. peel the cooked potatoes and plane it.
Peel onions and plane, then mix with potatoes. Creak eggs and add to potato and onion. Add black pepper, salt, and turmeric. Then mix them and stir completely.
Pour oil into non-stick pan, when oil become hot, turn down the heat and pour mixed ingredients and spread them completely with the back of spoon, put the pan’s lid on and let cook with low heat for 10 min. cut kookoo in 4 parts radially and turn over them until cooking for another 10 min
This dinner food can bee more delicious if serve with bread and salad.. 


Spinach stew (khoresht esfenag)

Ingredients: (4 servings)
Spinach: 1/5 kg
Chicken: 700 grams
Onion: 2
Lime juice: 2-3 spoons
Water
Turmeric
Oil
Salt
Pepper
Direction:
Wash spinach and cut in 2-3 parts.
Cut chickens, add salt and fry.
Cut onions in small pieces and fry, add turmeric, then pour spinaches and fry (very lightly),
add 2 glasses of water, once water start boiling turn down the heat and add chickens.
Let this delicious and healthy food continues boiling for 30-45 min, then add salt, lime juice and pepper. After 5 min stew is ready.
This delicious stew can serve with white rice.

iranian food - Baby lima bean rice (Baghali Polo)

Ingredients: (4 servings)
  • Rice: 500 grams
  • Baby lime bean: 200 grams
  • Beef or lamb: 400 grams
  • Fresh dill: 300 grams
  • Sweet pomegranate: 1 spoonful
  • Salt
  • Black pepper
Direction:
Cook meat in 1-1/2 glasses of water and salt for 1 hour.
Wash and soak rice in water with 2 spoons of salt for 2 hours.
Clean and wash fresh dill and cut into small pieces.
Pour water in the pot, when water start boiling add rice and let boiling for 10 min until rice become soft, then add baby lime beans and chopped dill to rice, mixed them completely and drain.
Pour some oil into bottom of pot; add half of mixed rice with baby lime beans and dill,
Strew pepper to meat and then rob sweat pomegranate to it..
Put meat into rice and pour remained of rice into the pot.
Let this delicious baby lime bean rice cook with low for 1 hour.

Ingredients: (4 servings)

  • Rice: 500 grams
  • Lamb or beef: 400 grams
  • Green beans: 400 grams
  • Onions: 2 big
  • Tomato past: 2 spoonfuls
  • Oil
  • Salt
  • Turmeric
  • Black pepper
  • Red pepper
Direction:
Wash and soak rice in the water with 2 spoons of salt for 2 hours.
Cut green beans in small pieces, pour 2 spoons of oil in the pan and fry green beans.
Cut onions in small pieces and fry until become golden, add turmeric. Cut meat into small pieces and fry with onion, when meat become brown, pour tomato past and add 2-3 glasses of water and then add green bean, salt, red and black pepper( if you want to be more spicy can use more red pepper), put lid on the pot and let boil very slowly for 20-30 min.
Pour water in the pot, when water boiling add rice, after 8-10 min, when rice is half cooking and soft, drain it.
Pour some oil into bottom of pot, add half of rice, then pour mixed meat and green bean, finally add remained rice.
Let this delicious green been rice cook over law heat for 1 hour..

iranian food - Celery stew (Khoresht Karafs)

Ingredients: (6 servings)
  • Lamb or beef: 500 grams
  • Celery: 1 kg
  • Onions: 2 big
  • Lime juice: 3 spoons
  • Fresh mint: 500 grams
  • Oil: ½ cup
  • Salt
  • Pepper
  • Turmeric
Directions:
Cut onions in small pieces and fry in the oil, add turmeric, cut meat in small pieces and add to onions after meat brown pour 3 glasses of water, let boil slowly for 1 hour.
Cut mint and fry in the oil and cut celery in small pieces and add to mint.
Ad mixed mint and celery to stew. After 20 min add salt, pepper and lime juice, let boil for 5-10 min. celery should not cook more.
Amount of lime juice is optional and you can make adjustment as desire.
This delicious stew serve with white rice.

persian food - Prune stew ( Khoresht Aaloo)

Ingredients: (4 serving)
  • Chicken: 750 grams
  • Pitted prunes: 400 grams
  • Onions: 3
  • Potatoes: 2 big
  • Oil
  • Salt
  • Pepper
  • Tomato past: 2 spoons
Direction:
Soak pitted prunes in the cold water for 15 min.
Cut onions in small pieces and fry, add turmeric, after onions golden add pieces of chicken, after chicken fry pour 2 glasses of water, then add pitted prunes and let boil slowly for 1 hour.
Cut potatoes in thinly pieces and fry.
Add potato past, salt and pepper to stew and let boil for 30 min.
Add fried potato to stew.
This delicious stew can serve with white rice.

How to cook Egg plan stew (Khoresht Bademjan)

Ingredients: (6 serving)
  • Egg plan: 500 grams
  • Potato: 500 grams
  • Tomato: 4
  • Onions: 3
  • Tomato past: 1-1/5 spoons
  • Lime juice: 1-2 spoons
  • Water: 2-3 glasses
  • Turmeric
  • Salt
  • Pepper
  • Oil: 1 glass
Direction: (cooking Persian food)
Peel potatoes and cut in small pieces, add salt and fry.
Peel egg plans and cut thinly, add salt and fry.
Cut onions in small pieces, fry in the oil, add turmeric, then peel tomatoes and cut in small pieces, add to onions and let cook for 5 min. add tomato past and 2 glasses of water. Add salt, pepper and lime juice then let slowly boil for 15 min.
Add fried egg plans and fried potatoes.
This delicious stew can serve with white rice.

Cooking Lentil Rice (Adas Polo)

Ingredients: (6 serving)
  • Lentil: 400 grams
  • Rice: 500 grams
  • Ground beef or lamb: 400 grams
  • Raisins: 120 grams
  • Onions: 2 large
Direction: (cooking Iranian food)
Wash lentil and let cook with water for 20-30 min.
Cook rice in the water with salt about 5-10 min, then drain water and empty the pot.
Mix cooked lentil with cooked rice.
Cut onions in small pieces and fry, add turmeric then add ground meat, salt and pepper, after the meat fry add raisins, after 1-2 min turn off the heat.
Pour some oil in the pot, then half of mixed lentil rice and then mixed meat and raisins, then pour all of the lentil and rice.
Let this delicious lentil rice cook over law heat for 30-45 min.

making Fesenjan stew (Khoresht Fesenjan)

Ingredient: (6 serving)
  • Chicken pieces: 1-1.50 kgs
  • Ground walnuts: 500 grams
  • Onions: 3-4
  • Pomegranate past: 3-4 spoons, (pomegranate juice: 2-3 glasses)
  • Sugar: 4-5 spoons (if you want more sweet can use more sugar)
  • Oil: ½ cup
  • Salt
  • Turmeric
Direction: (Iranian food recipe)
Cut onions in small pieces and fry in the oil, add turmeric, after onion golden, add ground walnuts and pour water, after boiling turn down the heat and add salt, pomegranate past or juice, then pour sugar, let slowly boil for 1-1/2 hours.
Add salt to chickens and fry. Pour chickens in the stew and let boil very slowly for ½-2 hours, until the walnuts oil comes up.This delicious stew can serve with white rice.

how to make Ghayme stew (Khoresht - e Gheyme)

Ingredient: (6 serving)
  • Stewing lamb or beef: 750 grams
  • Split-peas: 250 grams
  • Onion: 3-4
  • Potato: 500 grams
  • Oil: ½ cup
  • Dried limes: 3-4 crushed (fresh lime juice can be used instead)
  • Tomato past: 2-3 spoons
  • Salt
  • Black pepper
  • Turmeric
Direction: (this stew is a delicious Iranian food)
First soak the split-peas in the water for 1 hour. Next, Cut onions in small pieces and fry in the oil, add turmeric, after onions golden add beef or lamb (before cut in small pieces). After meat fry, pour water and let boiling very slowly for 1 hour. Add spit-peas and crushed limes and let continue boiling for 1 more hour.Cut potatoes in thinly pieces and fry.
Add tomato past and salt and pepper, after a half of an hour stew is ready, add fried potato and enjoy it. This delicious stew can served with white rice.
